Egg-drop Soup

Have you ever made egg-drop soup? Did you know that it's got to be the easiest, fastest, most comforting last-minute thing to make?

4 cups (1 quart) chicken stock
2 teaspoons soy sauce
2 eggs, lightly beaten
3 scallions, sliced thinly on diagonal

Bring broth to a boil, add soy sauce. Slowly pour the eggs into the broth, in a stream, and add scallions. Turn down heat and let cook about 5 minutes. Serve.

This is my little gift to you -- this instant meal for a time of year when a quick something to eat is just the ticket. What's your favorite emergency meal?

Fettucini Alfredo:

2 tbsp butter melted in pan
add scant 1 cup heavy cream. Heat until you see steam. Slowly add 2/3 cup freshly grated parmesan, waiting until it melts to add more. Salt and pepper. Toss with cooked pasta and voila!

My kids love it and eat it up and it comes together super fast! Plus it's made with things that I always have on hand.

Mashed banana on toast ... yum! And good for you! Mash the two halves of a banana on two slices of wholemeal toast, drizzle a bit of honey over and that's a power=packed brekkie or a quick little lunch!

Heart attack pasta:
(for2)
I portion whatever pasta you like dry or fresh.

Fry a a chopped onion in a little olive oil and when almost ready add in a good dash of paprika and fry 30 secs more. Take off heat. Stir in a small carton of soured cream and I'd guess about 4 oz of cheddar cheese grated. (Enough so the sauce is the right considetnce to coat pasta!) Add cooked pasta, return to heat until hot enough to eat. Serve with garlic bread.

And no I do not know nor do I wish to know the calorie or cholestorol content of this meal but boy does it taste good!

Or for dire, dire emergencies:

Grill 2 sausages per person.
Cook as per packet instructions a packet of flavoured rice (e.g golden vegetable.)
Chop sausage. Stir into rice
Eat (with crusty bread if available) and pretend it is mexican paella or the like.
A good student staple!
